Asian Chicken Chili from Heart Smart by Bonnie Stern, p250. "This dish combines Eastern flavours with Western ideas. It is old-fashioned comfort food updated with international ingredients and a lighter style. Serve it over steamed rice or couscous." Note: do not confuse the sesame oil used with unflavoured golden sesame oil: this recipe uses the dark, fragrant roasted sesame oil.

Recipe Ingredients for Asian Chicken Chili (Heart Smart by Bonnie Stern)

1 tbsp Vegetable Oil, Canola
6 tsp Ginger Root
6 medium (4-1/8" long) Onions, Spring Or Scallions
3 clove Garlic
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.67 tablespoon Szechuan Spice Paste For Stir Fry
500 grams Chicken
28 oz Plum Tomatoes
4 cup Unico Red Kidney Beans
2 tbsp Soy Sauce
0.5 serving Rice Cooking Wine
0.33 serving Sesame Oil

Recipe Directions for Asian Chicken Chili (Heart Smart by Bonnie Stern)

  1. Finely chop the fresh ginger root and the garlic.

  2. Chop the green onions.

  3. Seed and dice the red peppers.

  4. Dice the chicken breasts, or use ground chicken.

  5. Drain and puree the can of plum tomatoes.

  6. Rinse and rain the cooked red kidney beans.

  7. Chop the fresh parsley or cilantro.

  8. Heat vegetable oil in a large, deep non-stick skillet or wok on medium heat. Add ginger, green onions, and garlic, and cook gently for 30 seconds or until fragrant. Add red peppers and chili paste and cook for a few minutes.

  9. Pat chicken dry and add chicken to skillet. Cook, stirring constantly, for about 5 minutes, until chicken pieces are white on outside.

  10. Add tomatoes and bring to a boil. Reduce heat and simmer gently for 30 minutes, or until mixture is quite thick and almost all juices have evaporated.

  11. Stir in beans, soy sauce, and rice wine. Cook for 10 minutes.

  12. Stir in sesame oil and parsley. Taste and adjust seasonings if necessary.
