So yummy and fulfilling - weeknight staple! I use leftover chicken from other meals in this. So fast and easy!

Recipe Ingredients for Asian Chicken & Beans

4 serving Light Soy Sauce
0.5 lemon yields Lemon Juice
2 Tbsp Organic Cream Peanut Butter No Sugar added
2 tbsp Extra Virgin Olive Oil
1/4 cup Raw Walnuts
6 tsp Sriracha Chili Sauce
1 cup Organic Shelled
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cup, chopped or diced Chicken, Breast, Meat Only
6 cloves, raw Garlic
2 cup, shredded or chopped Lettuce, Butterhead

Recipe Directions for Asian Chicken & Beans

  1. Combine soy sauce, lemon juice, peanut butter, 1 Tbsp of oil, and sriracha sauce in a bowl and set aside.

  2. Heat remaining oil in skillet pan on medium. Add chopped garlic and cook for 30 seconds. Add chicken, walnuts, and both beans. Stir for about two minutes, or until warmed. Add a little chicken stock to loosen pieces that get stuck to the bottom of the pan if needed. Add sauce mixture and stir for another minute until all combined and warm.

  3. Serve over lettuce.
