This is a fabulous, light salad perfect for a healthy lunch, picnic dinner or a side dish. You're gonna love this one.

Recipe Ingredients for Asian Cabbage and Chicken Salad

8 oz Chicken, Breast, Meat Only
1/2 tsp Sea Salt
1 medium (2-1/2" dia) Onions
4 cup chopped raw Napa Cabbage
1 stalk, medium (7-1/2" - 8" long) Celery
1/4 medium raw Bell Pepper Red
2 oz Lime Juice
1 oz Naturally Brewed Less Sodium Soy Sauce
1 oz Agave Nectar
2 oz Rice Wine Vinegar

Recipe Directions for Asian Cabbage and Chicken Salad

  1. Add the chicken and 1 teaspoon salt to a small saucepan and cover with water. Bring to the boil then reduce to simmer for about 5 minutes to poach. Remove and drain the chicken and allow to cool while preparing the rest of the salad. Once cooled, mince into small pieces.

  2. Slice the onion in half and then slice each half into very thin slices. Place in a large salad bowl.

  3. Finely chop or shred the cabbage, celery and celery leaves. Add to bowl with onions.

  4. Chop red bell pepper and add to salad bowl.

  5. Combine all the dressing ingredients in a small jar. Shake to combine.

  6. Add the chicken to the salad bowl and pour the dressing over the salad. Toss everything to combine.
