Recipe Ingredients for Ashmo's Quesadilla

2 flour tortillas
1/4 c. of cheese
1/4 c. of black beans
1/4 c. of Rotel tomatoes
1 T. cilantro
1 T. onion

Recipe Directions for Ashmo's Quesadilla

  1. Heat oil in a skillet (a few T.) and add one tortilla. Keep heat on medium. Add half of cheese to bottom of tortilla and pile on beans, Rotel, and cilantro. Add the other tortilla to the top and flip (gently) when cheese has melted on the bottom and the bottom tortilla is browned.

  2. Put on a plate with a paper towel to remove excess oil and then cut into four triangles and serve.
