This is a modified version of a turkey meatloaf recipe I found on BigOven. Easy and delicious!!!

Recipe Ingredients for Ashley's Turkey Meatloaf

20 oz Ground Turkey, 93% Lean
1 1tsp Olive Oil
4 tsp Garlic
1 medium raw Carrots
0.5 tsp Sea Salt
0.5 tsp Ground Black Pepper
0.33 cup Parsley
4 tbsp Organic Ketchup
1 cup Bread Crumbs, Dry, Grated, Plain
0.33 cup Organic Fat Free Milk
1 large Egg, White

Recipe Directions for Ashley's Turkey Meatloaf

  1. Cook garlic (minced) in olive oil over moderate heat. Add carrot (finely chopped), 1/2 tsp ground sea salt, and 1/2 tsp ground pepper and cook. Stir in parsley (finely chopped) and 3tbs ketchup and mix. Place in large bowl to cool.

  2. Stir breadcrumbs and milk together and let stand 5 minutes. Stir in beaten egg and add mixture to ketchup mix.

  3. Add turkey and mix well with hands. The mixture will be quite moist.

  4. Form into loaf in a lightly oiled loaf pan and brush top evenly with remaining ketchup.

  5. Bake at 350 on center rack until inside temperature reaches 170 - about 50-55 minutes.
