Recipe courtesy Tyler Florence Difficulty: Easy Prep Time: 10 minutes Yield: 4 servings The vinagrette is excellent!!!!! I used 2 tsp of honey rather than 1 each of sugar and honey. Another night I tossed in toasted walnuts, baby spinach and spring mix and it was yummy as well.

Recipe Ingredients for Arugula Salad and Ultimate Vinaigrette

2 tbsp. (1 shallot) shallot, finely minced
1 teaspoon Dijon mustard
2 teaspoons red wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon sugar
1 teaspoon honey
1 Kosher salt to taste
1 freshly ground black pepper to taste
6 cups arugula

Recipe Directions for Arugula Salad and Ultimate Vinaigrette

Combine the shallot, mustard, vinegar, oil, sugar, honey and salt and pepper in a jar and shake to emulsify. Toss arugula with vinaigrette, to taste.
