Recipe Ingredients for Arugula and Roasted Cauliflower Salad

5 cups cauliflower
1 1/2 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 tbsp champagne vinegar
1/2 tbsp dijon mustard
1/4 cup olive oil
4 cups arugula
1/2 cup red onion
2 oz Parmesan cheese

Recipe Directions for Arugula and Roasted Cauliflower Salad

  1. Preheat oven 450.

  2. In shallow roasting pan combine bite size florets cauliflower,oil,1/4 tsp salt and pepper; toss.

  3. Roast uncovered for 30 min, stirring twice. Remove and cool.

  4. In small bowl combine vinegar, mustard and 1/4 tsp salt. Whisk in remaining oil until combined.

  5. In large bowl combine cauliflower,arugula and thinly sliced onion. Add vinegar mixture and toss. Top with shaved Parmesan cheese.
