Super easy frittata loaded with veg

Recipe Ingredients for Arugula Red Pepper Frittata

8 large eggs
1 cup arugula
1 red pepper
1/4 cup tomatoes
2 tbsp parmesan cheese
1/2 small red onion
1/4 cup 5% cream
1 tsp canola oil
50 g kippers

Recipe Directions for Arugula Red Pepper Frittata

  1. Preheat oven to 350.

  2. Dice veg, roughly chop arugula. Break kippered fish into pieces.

  3. Beat eggs and cream til frothy.

  4. Heat lightly oiled 9" round baking pan in oven for 5 minutes.

  5. Stir veg into egg mix. Pour into hot pan. Put in oven for 25-30 mins until middle barely wobbles. Serve at room temperature or warm.
