2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 salt and pepper
1 cup grape tomatoes, halved
1/2 small red onion, thinly sliced
5 oz baby spinach

Recipe Directions for Arugula and Red Onio n Salad

  1. In a large bowl, whisk together the oil, vinegar, mustard and 1/4 tsp each salt and pepper.

  2. Add the tomatoes and onion and toss to combine. Toss with the arugula and serve immediately
