Linguine with a fresh green touch of peppery arugula pesto.

Recipe Ingredients for Arugula Pesto with Linguine

16 oz. linguine
3 1/2 cups arugula
1/3 cup raw cashews
1/4 cup olive oil
3 cloves garlic
1 c sun dried tomatoes

Recipe Directions for Arugula Pesto with Linguine

  1. Place arugula and garlic in food processor. Mince.

  2. Add cashews and blend until minced. Add salt and pepper to taste.

  3. Drizzle in olive oil or grape seed oil while pulsing until a bright green paste forms.

  4. Place pesto at the bottom of serving dish and leave at room temperature while linguine cooks.

  5. Cook linguine according to packaged directions.

  6. Drain linguine and add to pesto. Toss together until pesto is evenly covering the pasta.

  7. Rough chop the sun dried tomatoes. Add and quickly toss with pasta.
