Arugula is one of my favorite lettuces because of it?s surprising peppery flavor and its versatility. Arugula can be eaten fresh and raw in salads and on sandwiches, wilted on pizza, cooked in soup, blended into a pesto, and utilized in many other ways. Here, the flavor of these spicy leaves pop when tossed with a tangy lemon vinaigrette and paired with sweet fennel and full-flavored Parmesan cheese.

Recipe Ingredients for Arugula Fennel Salad with Shaved Parmesan and Lemon Vinaigrette

4 cups Baby Arugula Salad
0.5 medium bulb raw Fennel
0.75 oz Parmesan, Hard Cheese
1 fruit (2-1/8" dia) Lemons
0.13 tsp Kosher Salt
0.25 tsp Pepper, Black

Recipe Directions for Arugula Fennel Salad with Shaved Parmesan and Lemon Vinaigrette

  1. Wash the arugula very well and dry thoroughly. Place the leaves and plates in the refrigerator until ready to serve to chill.

  2. Cut the green stalks from the white fennel bulb and cut off the bottom of the bulb. If the outer layer of the fennel bulb is browned or bruised, cut or peel off this layer and discard. Then, using a mandoline or very sharp knife, cut paper-thin slices of fennel crosswise.

  3. Cut the lemon in half. Over a fine mesh sieve placed in a bowl (to catch the seeds), use a fork to juice the lemon (~4 Tbsp juice). Add the olive oil, salt, and pepper to the lemon juice and whisk well to combine.

  4. Using a very sharp knife, cheese shaver, or vegetable peeler, make a palm full of Parmesan shavings.

  5. Gently toss the arugula with the lemon vinaigrette and then plate the coats leaves. Top with the fennel slices and Parmesan shavings, and finish with grindings of fresh black pepper, to taste.
