Artisan Bread Recipe

A "no-knead" bread that is super good! You will need to plan ahead, however.

Recipe Ingredients for Artisan Bread

1 cup unbleached white flour
3 cups whole wheat flour
2 teaspoons sugar
2 teaspoons instant yeast
1 teaspoons salt
6 tablespoons sunflower seeds
2 cups warm water

Recipe Directions for Artisan Bread

  1. Put flour, sugar, yeast, salt, and sunflower seeds in a large bowl. Stir well to combine.

  2. Add water and mix thoroughly with your hands to combine. If there is flour left on the bottom of the bowl, add a little more water to incorporate. Cover with plastic wrap or a plate or a damp teatowel and leave in a warm spot i.e. a slightly warmed oven, for 4-6 hours (the gluten in the flour reacts with the yeast, and this is why you don't have to knead the dough).

  3. After 6 hours, loosen the dough from the edges of the bowl. Line a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) with parchment paper. Turn the dough from the bowl into the pot. Cover and leave in a warm place (i.e. on top of the stove) for about an hour. Dough is ready when it mostly fills the pot.

  4. Preheat oven to 425. Bake dough in pot in for 30 minutes, covered. After 30 minutes, turn the oven temperature down to 375, remove pot lid, and bake for an additional 30 minutes.

  5. Remove the bread from the pot and let it cool on a rack for at least 1 hour before slicing.
