This recipe can be made lighter if almonds are toasted without butter. Butter adds flavor, but can be ommitted

Recipe Ingredients for Artichokes with Toasted Almonds

9 ounce frozen artichoke hearts (cooked and drained according to package directions)
2 ounces almonds (sliced)
2 tablespoons butter
1 dash salt

Recipe Directions for Artichokes with Toasted Almonds

  1. melt one tablespoon of butter in sauce pan over medium heat

  2. Add sliced almonds and toast until golden on both sides (no more than 1 minute total). Remove almonds from sauce pan and set aside

  3. Add another tablespoon of butter to sauce pan and melt, add drained artichoke pieces to sauce pan. Making sure to cook both sides. Add almonds and cook for 1/2 minute more.

  4. Remove from heat.
