Recipe Ingredients for Artichokes with Roasted-Garlic aioli

15 cloves garlic (3 whole heads)
4 artichokes, large
2 tbs lemon juice
1/3 cup light mayonnaise
1/3 cup plain fat-free yogurt
1/4 tsp black pepper
1/8 tsp salt

Recipe Directions for Artichokes with Roasted-Garlic aioli

  1. Preheat oven to 400 degrees

  2. Remove white papery skin from garlic (do not peel or separate cloves). Wrap each head separately in aluminum foil. Bake at 400 degrees for 45 min or until tender; cool.

  3. While garlic bakes, cut off stems of artichokes; remove bottom leaves. Trim about 1/2 inch from tops of artichokes; trim leaves, if desired. Place artichokes, stem ends down, in a large Dutch oven filled two-thirds with water. Add lemon juice; bring to a boil. Cover, reduce heat, and simmer 40 minutes or until a leaf near the center of each artichoke pulls out easily.

  4. Separate garlic cloves, and squeeze pulp into a small bowl; discard skins. Mash pulp with a fork. Stir in mayonnaise, yogurt, pepper, and salt. Serve as a dipping sauce with artichokes.

  5. Yield: 4 servings (serving size: 1 artichoke and 3 tablespoons aioli).
