Artichoke Tuna Melt from "Simple & Delicious."

Recipe Ingredients for Artichoke Tuna Melt

8 oz Bread, French Or Vienna
1 tbsp Olive Oil
1 clove Garlic
6 oz Light Mayonnaise
1 tbsp Lemon Juice, Canned Or Bottled
3 tsp Classic Dijon Mustard
0.5 tsp Garlic Powder
1 dash Pepper, Black
20 oz Tuna, Light, Canned In Water, Drained Solids
1 Can Artichoke
1 cups Baby Spinach
2 medium raw Plum Tomato
4 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Artichoke Tuna Melt

Split loaf of French bread in half lengthwise; use the bottom half. Brush bread bottom with oil. Place cut side up on an ungreased baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until golden brown. Rub cut sides of garlic over bread; discard garlic. In a large bowl, combine the mayonnaise, lemon juice, mustard, garlic powder, and pepper. Stir in tuna and artichokes. Arrange spinach over bread; top with tuna mix, tomatoes and cheese. Broil 1-2 minutes longer or until cheese is melted. Cut into six slices
