Artichoke & Sundried Tomato Stuffed Chicken

Recipe Ingredients for Artichoke & Sundried Tomato Stuffed Chicken

1 tablespoon olive oil
2 tablespoon butter
3/4 cup chopped red onion
7 oz artichoke hearts
1/2 cup Sun-Dried Tomatoes
1/2 teaspoon salt
1/2 teaspoon fresh cracked black pepper
2 tablespoons minced garlic
1/4 cup white wine
1/4 cup grated Parmesan
1/4 cup Parsley
24 oz boneless, skinless chicken breasts

Recipe Directions for Artichoke & Sundried Tomato Stuffed Chicken

Med heat - Onions in oil for 1 min, add artichokes & sundried tomatoes for 3-5 min, add garlic, salt & pepper until garlic starts to brown. Deglaze with wine. Add parm & parsley, stir, set aside to cool for a minute. Flatten chicken, spoon artichoke/sundried tomato mixture into the chicken, roll it up, bake 35 min @ 375 degrees.
