Like the artichoke dip but healthier. Use 6 ounces Laughing Cow (3 wedges light garlic and herb and 3 wedges light original) will add 210 calories and 6 carbs to overall recipe. Divided by 6 is +35 calories per serving and 1 carb. For some reason I could not get recipe analyzer would not accept Laughing Cow.

Recipe Ingredients for Artichoke, Spinach Side Dish

12 ounces artichoke hearts, frozen or canned
10 ounces spinach, frozen
126 g light garlic & herb
1/4 cup milk, evaporated light
1 egg
1 garlic clove
1/4 cup onion, minced

Recipe Directions for Artichoke, Spinach Side Dish

  1. Mix all dairy products and garlic clove, minced.

  2. Mix with defrosted artichoke hearts, spinach and 1/4 cup minced onion if desired.

  3. Bake at 400 degrees for 20 minutes. Enjoy!
