A delicious vegetarian alternative to the classic. Requires about an hour to make.

Recipe Ingredients for Artichoke Spinach Lasagna

16 oz uncooked pasta, 20 pieces lasagna
1 pound lean ground turkey
1 large onion, chopped
1 teaspoon garlic powder
10 ounce chicken broth (3/4 can)
1 tablespoon chopped basil
1 teaspoon dried oregano
14 ounce artichoke hearts, chopped and half-way drained
20 ounce frozen chopped spinach, thawed, drained and squeezed dry
1 cup mushrooms
3 zucchinis
42 ounce tomato sauce
3 cups shredded mozzarella cheese, divided
4 cups light ricotta cheese
1/2 cup feta cheese, crumbled (herb and garlic works well)
1 cup shredded parmesan cheese

Recipe Directions for Artichoke Spinach Lasagna

  1. Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with cooking spray.

  2. Spray a large skillet with cooking spray and heat on medium-high. Saute onion and garlic for 2 minutes.

  3. Add in chopped mushrooms and saute for another minute or until onion is slightly tender, but with a little crispiness.

  4. Stir in broth, basil and oregano; bring to a boil. Stir in artichoke hearts and spinach; reduce heat, cover and simmer 5 minutes. Stir in tomato sauce.

  5. Spread 1/4 of the artichoke mixture in the baking dish; top with 3 uncooked noodles (The liquid in the sauce will cook the noodles while the lasagna is baking).

  6. Combine mozzarella, ricotta and fetta cheeses

  7. Sprinkle 1 cup cheese mix over noodles. Cover with three more noodles. Repeat layers 2 more times, ending with artichoke mixture. Sprinkle all leftover cheese on top.

  8. Bake, covered, for 40 minutes. Uncover, and bake 15 minutes more, or until hot, bubbly and cheese is slightly brown. Let stand 10 minutes before cutting.
