I made several changes to the original recipe in order to create a healthier alternative: I substituted Fresh Spinach for frozen, I decreased the amount of cheese by half and also substituted reduced fat cream cheese for regular. I decided to use more onion and fresh mushrooms also. I think that changing the types of cheese in the recipe to more intense flavors makes it possible to use less of the cheese. My modifications will reduce saturated fat and calories, while also adding vitamins to the dish.

Recipe Ingredients for Artichoke Spinach Dip with Healthy Modifications

1 pound Fresh Spinach
42 ounce artichokes, drained and chopped
1 large onion, chopped
1 tablespoon fresh garlic, minced
1 cup plain yogurt
1/2 cup parmesan cheese, grated
1 cups cheddar cheese, grated
1 cups gruyere, grated
8 ounce reduced fat cream cheese
1 can cream of mushroom soup
1/2 pound fresh mushrooms

  2. 2. Mix all ingredients.

  3. 3. Place in baking dish and bake at 350 degrees 35-45 minutes.

  4. 4. Serve with wheat crackers or chips.
