Makes 6 1/2 servings



1 Cup serving. Original recipe calls for 1 c buttermilk, instead of 1 c water and 4 T buttermilk blend. Taken from Whole Foods Recipes for Better Living (Vita-Mix).

Recipe Ingredients for Artichoke and Roasted Red Pepper Soup (Vita-Mix)

1 1/2 c chicken stock
1 c water
4 T buttermilk blend
1/2 c onions, chopped
3 cloves garlic
439 g canned chickpeas (15.5 oz. can)
240 g canned artichoke hearts (14 oz. can)
1 c roasted red peppers, chopped
1/4 c fresh parsley, chopped
1/4 c extra virgin olive oil

Recipe Directions for Artichoke and Roasted Red Pepper Soup (Vita-Mix)

  1. Reserve: 1/2 chickpeas, 1/2 artichokes, roasted red peppers, parsley

  2. Place all ingredients in Vita-Mix and run on High for 6-7 minutes.

  3. Change speed to Variable #4, place reserved ingredients in Vita-Mix and run for 10 seconds.
