Recipe Ingredients for Artichoke Rice Salad

4 cups light % fat free chicken broth
2 cups uncooked white rice
19 1/2 oz marinated artichoke, chopped
1 1/2 cups Light Mayonnaise
1 tsp curry powder
5 green onions, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1/4 cup parsley, chopped

Recipe Directions for Artichoke Rice Salad

  1. Combine rice and chicken broth, cover and cook on low until broth is absorbed - about 15 - 20 minutes

  2. Mix together artichoke marinade, mayonnaise and curry powder. Add pepper to taste. Set aside

  3. In a large bowl combine artichoke hearts, green onions, bell pepper, parsely and celery

  4. Mix in cooked rice and them mayonnaise mixture

  5. Cover and chill overnight

  6. Serve cold
