A lighter version of artichoke dip. Can be made in a single dish as an appetizer or served in ramekins as an entree.

Recipe Ingredients for Artichoke Ramekins

14 oz canned artichoke hearts, packed in water and drained
1/2 red pepper, diced
8 oz canned diced green chilies
1/2 c reduced fat mayonnaise
6 oz parmesan cheese, shredded
12 grams minced garlic
3 pinches of cayenne or paprika

Recipe Directions for Artichoke Ramekins

  1. Preheat oven to 350. Lightly oil four ramekin dishes.

  2. Mix all ingredients and divide among dishes. Sprinkle tops lightly with paprika.

  3. Bake 20-30 minutes until lightly browned and bubbly.

  4. Serve with whole wheat pita triangles, corn tortillas, or baguette slices.
