Foil-cooked tilapia with artichoke, pesto, & tomatoes. Very tasty & LESS than 150 calories each!

Recipe Ingredients for Artichoke Pesto Tilapia

112 g (4 oz) artichoke hearts
8 tsp pesto
1 cup tomato sauce
4 Roma Tomatoes, seeded & chopped
1/2 cup onion, coarsely chopped
2 cloves (1 Tbl minced) garlic
1 pepper
12 oz tilapia (4 filets, appr. 3 oz each)

Recipe Directions for Artichoke Pesto Tilapia

  1. Chop artichoke hearts. Combine in small bowl with pesto.

  2. Combine tomato sauce, tomatoes, onions, garlic, and pepper in medium bowl.

  3. Spray 4 sheets of aluminum foil with non-stick cooking spray.

  4. In center of each piece of foil, assemble individual servings as follows: fish, spread with 1/4 artichoke/pesto mixture, 1/4 tomato/onion mixture.

  5. Close foil by folding over top of fish and fold both ends. Grill on top rack on medium to high heat for 10 minutes or until fish is flaky - do NOT overcook. Remove from heat and let sit for 5 minutes before serving.

  6. Garnish with shredded parmesan cheese if desired (extra calories!).
