artichokes, raisins, pecans added to spagetti making a delicious salad served hot or cold

Recipe Ingredients for Artichoke pasta salad

4 oz pasta, spagetti
3 tbls extra virgin olive oil
5 cloves of garlic
10 oz artichokes
2 tsp basil
1/4 c raisins, golden
1/4 c pecans, chopped toasted
1/4 c cheese, Parmigiano-Reggianio
1 salt and pepper to taste

Recipe Directions for Artichoke pasta salad

  1. cook pasta in separate pot, set aside

  2. mince garlic and saute in skillet till soft, add artichokes to garlic, heat till warm through; add raisins to skillet, now add basil for seasoning then add the pasta and stir

  3. serve adding salt and pepper to taste then add pecans and cheese on top
