Recipe Ingredients for Artichoke Lasagne

1 1/2 cups shiitake mushrooms
1 1/2 cups onions, chopped
1 cup red bell pepper, chopped
2 tsp garlic, minced
8 cups spinach, torn into bite-size pieces
18 ounces artichoke hearts, bite size pieces
3 cups skim milk, divided
1/4 cup flour
2 tbsp flour
4 ounces fat-free Parmesan cheese, grated
4 ounces fat-free cream cheese, cubed
2/3 cup parsley, finely chopped
1/2 tsp thyme leaves, dried
1 tsp lemon juice
10 ounces pasta, cooked
4 ounces reduced-fat mozzarella cheese, shredded

Recipe Directions for Artichoke Lasagne

  1. Saute mushrooms, onions, bell pepper, and garlic 3 minutes; add spinach and artichoke hearts. Cook, covered, over medium heat until spinach is wilted, about 5 minutes. Cook, uncovered, until mizture is dry. Remove from Heat.

  2. Heat 2 cups milk to boiling in large saucepan. Mix remaining 1 cup milk and flour; whisk into boiling milk Boil, whisking constantly, until thickened, about 1 minute. Remove from heat; mix in Parmesan and cream cheese, parsley, thyme, and lemon huice, stirring until cream cheese is melted.

  3. Spread 1/2 cup sauce mixture on bottom 13x9 baking pan; arrange 4 lasagne noodles in pan, overlapping edges Spoon 1/2 cup artichoke mizture over noodles and spread with generous 1 cup sauce. Repeat, ending with layer of noodles and generous 1 cup sauce. Sprinkle with mozzarella cheese.

  4. Bake lasagne at 350 degrees, loosely covered, until hot through (~45 min) Let stand 10 minutes before cutting.
