Recipe Ingredients for ARTICHOKE HEARTS WITH PINE NUTS

2 cups macaroni, uncooked
6 1/2 oz artichoke hearts
1 red pepper, cut in strips
1 small onion, chopped
2 tbsp pine nuts
1 garlic clove, minced
1/3 cup grated parmesan cheese
1/3 cup light sour cream
1/8 tsp salt
1/8 tsp pepper

Recipe Directions for ARTICHOKE HEARTS WITH PINE NUTS

  1. Cook the pasts in a large pot of boiling, salted water until al dente. Drain and rinse with cold water; set aside. Drain the artichoke hearts (reserving the juice) and cut them into quarters.

  2. In a large heavy skiller, heat the juice from the artichokes over medium-high heat. Add the pepper, onion, pine nuts, and garlic and saute for approximately 5 minutes, until tender.

  3. Add the artichokes and heat for 1 or 2 minutes. Remove from the heat and let cool. In a large salad bowl, mix the pasts with the artichoke mixture, add the parmesan cheese and the sour cream.

  4. Season to taste with the salt and pepper. Cover and refrigerate until ready to serve.
