You can use frozen or canned artichoke hearts in water. The artichokes can be reduced to one cup if you want to reduce carbohydrates. Cute also when baked in individual au gratin dishes.To reduce fat and calories substitute milk for cream.If desired use 1/4 cup parmesan cheese to sprinkle on top.

Recipe Ingredients for Artichoke Frittata

10 ounces artichokes
2 cups Egg Beaters
1/2 cup heavy cream
1 cup cheese, reduced fat
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg, ground

Recipe Directions for Artichoke Frittata

  1. Spread artichokes in one 8 inch soufle dish.

  2. Sprinkle shredded cheese on top.

  3. Beat eggs with cream or milk and seasonings.

  4. Pour mixture over artichokes and cheddar.

  5. Top with cheese.

  6. Bake at 350 until frittata is puffy and lightly browned and the centre feels firm (about 20 minutes). Serve at once.
