A lighter version of the same amazing artichoke chicken. A gluten-free, low-carb food.

Recipe Ingredients for Artichoke chicken "light"

1 lb boneless skinless chicken breast
8 1/2 oz artichoke hearts (1 14oz can), drained
1/3 cup light mayonnaise
1/3 cup parmesan
1 tsp garlic powder

Recipe Directions for Artichoke chicken "light"

  1. Preheat oven to 375 degrees. Cut chicken so there are 4 pieces total and lay in bottom of pan.

  2. Chop artichokes and mix with parmesan, mayonnaise and garlic.

  3. Spoon over chicken and bake 20-30 minutes then broil until lightly browned.
