Similar to a tapenade without olives. Spread on a piece of bread, and offer a glass of dry Vermouth with an ice cube. Can also be served on a sturdy slice of fresh cucumber or dolloped onto a crisp celery spear.

Recipe Ingredients for Artichoke Bruschetta

1 Can Artichoke
2 tbsp Olive Oil
1/2 cup, chopped Peppers, Sweet, Red
2 tbsp, drained Capers, Canned
1 tablespoon Thyme
1 tbsp Parsley
1 clove Garlic
0.5 tsp Salt, Table
1 lemon yields Lemon Juice
1 tsp Lemon Peel

Recipe Directions for Artichoke Bruschetta

Roast the red pepper under the oven broiler, and dispose of charred skin. Drain artichoke hearts and chop coarsely by hand along with the roasted red pepper. Stir in remaining ingredients, including lemon juice and zest. Taste and adjust flavors to suit. All mixture to sit for four hours to enable flavors to meld then serve on ciabatta, toasted french bread or on a sturdy vegetable.
