0.5 cup Mozzarella Shredded
0.5 cup Freshly Shredded Parmesan
8 oz Cottage Cheese, Lowfat, 1% Milkfat
14 oz VIGO QUARTERED ARTICHOKE
1 tsp Italian Seasoning
0.25 tsp Pepper, Black

Recipe Directions for Artichoke Breakfast Frittattas

  1. Pulse artichoke hearts

  2. Rinse cottage cheese

  3. mix cheeses, artichoke hearts, pepper, and seasoning

  4. beat eggs and milk, then add to egg mixture

  5. spoon into greased muffin tins (12) and bake at 375 for 25 minutes
