14 ounces tofu, firm
2 cloves garlic
1 green bell pepper
2 jalapeno peppers
1 cup rice
2 cups boiling water
1 onion
1 tablespoon cilantro
1 tablespoon lime juice
1 pound mushrooms
1 tablespoon olive oil

Recipe Directions for Arroz con Tofu

  1. Season chicken with salt

  2. Sautee chicken, onion, garlic and lime juice

  3. Add rice and boiling water

  4. Add peppers, tomatoes, cilantro and mushrooms

  5. Cook for thirty minutes
