Yum! Creamy, hearty, warm Mexican style chicken and rice.

Recipe Ingredients for Arroz Con Pollo

2 lb chicken breast
1 med onion, chopped
2 cups mushrooms, chopped
1 T coconut oil
3 garlic cloves, minced
24 oz pico de gallo
3 oz pepper jack cheese, shredded
2 cups chicken stock
1 cup brown rice, raw
1/2 cup cilantro
1 t cumin
1/4 t. cayenne pepper
1 T chili powder

Recipe Directions for Arroz Con Pollo

  1. Heat the Oil, then add the chicken, onion, mushrooms and garlic. Salt and Pepper and 1/2 cumin. Cook until browned. Being cooked through is not important at this point.

  2. Add the salsa, stock, rice and the rest of the spices. Cook until rice is done and most of the moisture is gone. Should be loose, but not watery.

  3. Add in the cheese and stir.

  4. Serve.
