Spanish version of chicken and rice.

Recipe Ingredients for Arroz Con Pollo

1 lb Boneless Skinless Chicken Breasts
1 medium Green Bell Pepper
1/2 medium (2-1/2" dia) Onions
4 oz Tomato Sauce
3 cup (8 fl oz) Water
3 cups cooked white rice

Recipe Directions for Arroz Con Pollo

  1. Cut chicken breast into bite size chunks.

  2. Season chicken with fajita seasoning. (This contains no sodium).

  3. Heat a large skillet over medium-high heat.

  4. Spray the pan with olive-oil spray. (Adds 0 calories).

  5. Cook chicken for about 5 minutes or until no longer pink.

  6. Add onion and bellpepper and cook an additional 3-5 minutes.

  7. Add 1.5 cups uncooked white rice and brown in the pan.

  8. When the rice is browned add the tomato sauce and 3 cups water. (You can also use chicken stock for more flavor, but it does add some calories).

  9. Salt and Pepper to taste.

  10. Bring to a boil and then reduce the heat to medium-low.

  11. Cover and simmer for about 18-20 minutes.

  12. Remove from heat and let cool for about 3 minutes before serving.
