Arroz Con Pollo Recipe

A recipe similar to this appeared in Good Housekeeping Supermarket diet book; however, it was supposed to be cooked stovetop. I browned chicken, but transferred all ingredients to a slowcooker to cook the rice.

Recipe Ingredients for Arroz con pollo

1 1/2 lb. chicken thighs (skin and fat removed)
1 cup brown rice
12 oz. vegetable broth, low sodium
5 oz. sliced mushrooms
1/2 red pepper
1 onion, medium sized
1 tsp lemon peel
1 cups water
1/2 tsp sea salt
1/2 tsp pepper
1/4 tsp red pepper flakes
2 cups frozen peas
2 tsp canola oil
2 garlic cloves

Recipe Directions for Arroz con pollo

  1. Heat canola oil in a skillet. Place the chicken in the skillet and brown on both sides. As chicken is browning, add mushrooms, onions, and red pepper to the skillet. Cook 5-7 minutes until veggies are softened and chicken is brown.

  2. Transfer chicken and vegetables to slow cooker. Shave lemon peel and sprinkle over the chicken. Crush garlic clove into the chicken. Add sea salt and pepper. Spread rice over the chicken.

  3. In separate container, heat broth and water to boiling and pour into the slow cooker.

  4. Put the lid on the slow cooker. Cook on high for at least an hour. Adjust the liquid as needed. Rice may absorb all liquid and need to have additional water.

  5. When rice is cooked (after about an hour), add 2 cups of frozen peas and stir into the mixture. Allow 5 to 7 minutes of cooking time in the slow cooker. Adjust seasonings to taste.
