Arroz Con Pollo Recipe

The perfect all-in-one meal. The chicken, rice, and vegetables simmer together, enhancing each other and giving the cook a break.

Recipe Ingredients for Arroz con Pollo

1 tbsp olive oil
2 pounds chicken
2 tsp salt
1/2 tsp pepper
2 ounces ham
1 onion
2 cloves garlic
1 red bell pepper
1 green bell pepper
2 cups tomatoes
1 tbsp tomato paste
2 cups low sodium chicken broth
1 cup rice

Recipe Directions for Arroz con Pollo

  1. In a large, deep frying pan, heat the oil

  2. over moderately high heat. Season the

  3. chicken with 1/4 teaspoon each of the

  4. salt and pepper. Cook the chicken,

  5. turning, until well browned, about 8

  6. minutes in all. Remove. Pour off all but

  7. 2 tablespoons of the fat from the pan.

  8. Reduce the heat to moderately low.

  9. Add the ham, onion, and garlic to the

  10. pan and cook, stirring occasionally,

  11. until the onion starts to soften, about 2

  12. minutes. Add the bell peppers and

  13. cook, stirring occasionally, until they

  14. start to soften, about 3 minutes longer.

  15. Add the tomatoes, tomato paste, broth,

  16. and the remaining 1 3/4 teaspoons salt

  17. and 1/4 teaspoon of the pepper and

  18. bring to a simmer. Stir in the rice and

  19. add the chicken in an even layer.

  20. Simmer, partially covered, over

  21. moderately low heat until the chicken

  22. and rice are just done, 20 to 25

  23. minutes.
