Recipe Ingredients for Arroz Con Pollo

2 lbs boneless skinless chicken breast
2 cups brown rice
4 oz bacon
1/2 small onion
2 celery stalks
1 medium bell pepper
28 oz crushed tomatoes
8 oz tomato sauce
10 3/4 ounces green olives
2 tbsp extra virgin olive oil
3 tbsp worcestershire sauce

Recipe Directions for Arroz Con Pollo

  1. Cut up a chicken and put it on to boil in a large pot.

  2. Brown bacon in a large skillet, chop the bacon and reserve the grease. If needed, add 2-3 tablespoons olive oil or canola oil.

  3. Saute 1/4 to 1/2 of an onion in the oil and add celery and green bell pepper.

  4. Pour 2 cups of rice into oil and sauteed veggies and brown it, stirring constantly. (this will take a while - the rice kernels will turn white, then brown) Add more rice if you're feeding a lot of people! But 2 cups makes a big pot.

  5. Add a tablespoon (or to taste) of Worchestershire sauce.

  6. Add a can of stewed tomatoes and 1 can of tomato sauce.

  7. Season how you like it - I use Tony's and some garlic powder, or get the cajun- or italian-spiced stewed tomatoes. it will definitely need at least some salt and pepper.

  8. Keep stirring it all together, then let it simmer while you de-bone the chicken, reserving the water Cut the chicken up in bite-size chunks or just pull it apart in thin strips.

  9. Then put the chicken and the skillet mixture all back into the chicken broth. You may have to add a little water. It should look like slop- very watery but not drowned. the sauteed stuff will rise to the top and it will look VERY gross!

  10. Boil on the stovetop until all the liquid is absorbed and the rice is tender. Stir often so it doesn't burn on the bottom.

  11. Add sliced olives and reserved bacon last. Usually one of those tall skinny bottles will be just enough, depending on whether you like olives or not. I pour in about half the juice too, just for the flavor.

  12. Serve with saltine crackers and a salad....YUMMY!!!
