Recipe Ingredients for Arroz con Gandules

2 cups rice, raw
2 T vegetable oil
2 garlic cloves
1/2 green pepper
1 yellow onion
1/2 cup chicken broth
1 tsp turmeric
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp cayenne
2 cups pigeon peas , canned or pre-cooked
20 olives

Recipe Directions for Arroz con Gandules

  1. Cook the rice as directed

  2. While the rice is cooking, Dice the onion and green pepper, mince the garlic, then saute the onion and green peppers in the oil for about 3 minutes, then add the garlic and cook until soft, but not browned

  3. Add the chicken broth and all the spices

  4. Stir in the pigeon peas and rice, cover and let it cook together for about 15 minutes

  5. Stir in the olives right before serving
