Orginally, 1/4 cup bacon was supposed to be included in this recipe. However, bacon is extremely high in saturated fat and sodium, so I did not incorporate into this recipe for the sake of it being healthy. You can use brown rice instead of white rice, as brown rice is higher in fiber content than white rice. This dish is a Puerto Rican speciality that is low in saturated fat, very low in cholesterol, low in sodium, and very low in sugar. It is energy packed and it will fill your stomach for a long time. Unfortunately, this dish is low in vitamin A and vitamin C. Overall, this dish is suitable for a main course and is quite healthy as long as you pair it with foods that are high in vitamin A and vitamin C.

Recipe Ingredients for Arros Con Gandules

2 1/2 cups long grain white rice
5 cups water
3 tablespoons olive oil
4 tablespoons sofrito (jarred or make your own by dicing onion, bell pepper (any kind), garlic, cilantro and tomato)
1/4 cup ham, chopped
15 oz pigeon peas
2 tablespoons olives
1/2 teaspoon ground oregano
1/2 teaspoon ground cumin
2 teaspoons of ground basil
1/2 teaspoon tomato paste
1 salt and black pepper to taste

Recipe Directions for Arros Con Gandules

  1. Start by heating the oil in a pot at high heat, and when the oil is nice and hot, add the ham/sausage. Once that has browned, add the Sofrito. This must stir fry all together for about 1 minute.

  2. After that has been done add the water, then the peas, the olives, the tomato paste, and all the spices, including the envelope of sazon.

  3. At that point, add salt and pepper to taste. Bring this up to a boil then stir in rice.

  4. Once it has began to boil again, lower heat and stir 1 more time, then cover.

  5. Let this cook for about 30 - 40 minutes on a low heat setting, stirring occasionally (every 10 minutes) until the rice is tender. Serve.
