A lightly Indian flavored and filling low fat casserole dish.

Recipe Ingredients for Aromatic Chicken Sausage & Lentil Casserole

2 teaspoons of olive oil
1 pound of ground chicken
1 large onion
1 1/2 cups of lentils
2 cups of frozen spinach
1 1/2 cups of reduced-sodium chicken broth
1 teaspoon dried oregano
1 tablespoon of garam masala
1 1/2 cups of instant brown rice
1/8 teaspoon of freshly ground pepper
1 cup of low fat cheese

Recipe Directions for Aromatic Chicken Sausage & Lentil Casserole

  1. Preheat oven to 400F.

  2. Coat a 1-quart casserole or loaf pan with cooking spray.

  3. Heat oil in a medium skillet over medium heat and add sausage and onion; cook, stirring, until the onion softens, about 8 minutes. Add cooked lentils, frozen or fresh spinach, broth, garam masala powder and oregano. Increase heat to medium-high and cook, stirring often, until heated through, about 5 minutes. Stir in rice and pepper. Transfer the mixture to the prepared baking dish and cover with foil. Bake until the rice is tender, 30 to 35 minutes. Top with cheese and bake, uncovered, until the cheese melts, about 4 minutes more.
