Fresh tomatoes stuffed with a blend of couscous, currants, onions, leeks, pine nuts, mint and parsley.

Recipe Ingredients for Armenian Stuffed Tomato Salad

8 large tomatos
4 tbsp olive oil
1 large onion
1 large leek
750 g couscous
4 oz pine nuts
175 g currants
125 g parsley
1 tbsp mint
3/4 tsp salt
1/2 tsp black pepper
2 cloves garlic
4 oz stock
1/2 cup white wine
500 g baby spinach

Recipe Directions for Armenian Stuffed Tomato Salad

  1. Slice tops off tomatoes and scoop out flesh without damaging exterior of tomato. chop pulp finely.

  2. Heat olive oil and cook chopped onion & leek until golden. Ad cooked couscous, tomato pulp, nuts, currants, parsley mint, salt & pepper. Saute until mixture is hot and fully well-flavored.

  3. Fill each tomato with mixture and replace tops of the tomatoes.

  4. Place tomatoes onto a cooking sheet.

  5. Combine chopped garlic, stock and white wine. Drizzle around tomatoes.

  6. Bake at 350F/180C for 15 minutes.

  7. Wash and dry spinach. When tomatoes are finished cooking, remove them from baking sheet and drizzle remaining liquid over spinach leaves and toss.

  8. Serve a mound of warm spinach on each plate and perch a tomato on top.

  9. Drizzle any remaining liquid over and serve.
