Excellent and chocolaty zucchini cake first given to us by Arlene Vasey.

Recipe Ingredients for Arlene's Chocolate Chip Zuchinni Cake

1/2 cup butter
1 3/4 cup granulated sugar
1/2 cup corn oil
1/2 cup 1% milk
1 tablespoon lemon juice
2 eggs, beaten
1 teaspoon vanilla
2 cups zuchinni, chopped
1/2 cup chocolate chips
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
4 tablespoons cocoa
1/2 cup walnuts, chopped

Recipe Directions for Arlene's Chocolate Chip Zuchinni Cake

  1. Preheat oven at 325 degrees

  2. Grease and flour a 13x9x2 pan

  3. Combine softened butter with granulated sugar and beat together

  4. Add the corn oil, sour milk, beaten eggs, vanilla, zucchini and chocolate chips and set aside

  5. Sift together flour, baking soda, baking powder, spices and cocoa

  6. Mix wet and dry ingredients together, fold into pan and sprinkle with extra chocolate chips and chopped nuts and top as desired

  7. Bake and enjoy
