A vegetarian modified version of the Inn at Bree soup from the Middle Earth Recipes site (they have delicious recipes for bookworms to try!).

Recipe Ingredients for Ari's Vegetarian Vegetable Soup

1/2 pound Mushroom
1 tablespoon Onion
2 cups Carrots
2 cups Celery
1 cup Zucchini
1 clove Garlic
2 1/2 cups Vegetable Broth
4 cups Water
1 can Tomato Paste
1 tablespoon Olive Oil
1/4 cup Cooking Sherry (optional)

Recipe Directions for Ari's Vegetarian Vegetable Soup

  1. Preparation: Slice your mushrooms. Finely chop the onion, carrots, celery, and zucchini. Mince garlic.

  2. Put your soup pot on medium heat, add 1/4 tablespoon of olive oil and stir in 1 tablespoon of chopped onion until semi-translucent.

  3. Add 1/4 pound mushrooms, 2 cups of finely chopped carrots, 2 cups of finely chopped celery, 1 cup of finely chopped zucchini and 1 clove of garlic, minced. Pour another 1/2 tablespoon of olive oil over your vegetables and stir until they are coated and lightly heated.

  4. Stir in 2 1/2 cups of vegetable broth, 4 cups of water, 1 small can of tomato paste, salt and pepper to taste. Bring to a boil. Cover and reduce heat. Simmer for 1 hour. Purée the soup.

  5. In a separate pan, heat the last 1/4 tablespoon of olive oil, add the other 1/4 pound of sliced mushrooms, and sauté them for approximately 5 minutes. Add to the soup pot. Pour in 1/4 cup of dry sherry if desired. Heat thoroughly and serve.
