Recipe Ingredients for Argentine Scallops -New Orleans Style

1 1/2 lbs Scallops
1 lb Penne pasta
1 cup cream
1 cup Green Onion
1/4 cup parsley
1 pinch salt
1 cup mayonnaise
1/2 cup red bell pepper
1 tbsp garlic
1 tbsp lemon juice

Recipe Directions for Argentine Scallops -New Orleans Style

  1. make seafood baste

  2. 1 cup mayo

  3. 1/2 cup red bell pepper well drained and diced

  4. 3 tbsp blackened seasoning

  5. 1 tbsp finely minced garlic

  6. 1 tbsp lemon juice

  7. 1 dash of white vermouth (optional)

  8. 1 tbst lemon pepper (optional)

  9. combine all ingredients cover and chill thoroughly (overnight)

  10. in a large bowl, combine seafood baste with scallops and toss until all scallops are evenly coated

  11. place lage saute pan over high heat. when pan is hot add scallop mixture and spread evenly on the pan bottom.

  12. saute for 2 mins, toss, add remaining ingredients and continue to saute for an aitional 2-3 mins.

  13. serve over hot penne pasta and garnish with parmesan or asiago heese with a small caesar salad and crusty french bread.
