Recipe Ingredients for Arabian Vegetable Medley

1 pound eggplant, , unpeeled, cut into 1 1/2-inch cubes
1 tablespoon olive oil
2 cups onions, sliced
1 teaspoons garlic, minced
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon fresh ground black pepper
16 ounce tomatoes, undrained and coarsely chopped
8 ounce chickpeas, rinsed and drained

Recipe Directions for Arabian Vegetable Medley

  1. In large non-stick skillet, over medium-high heat, sauté eggplant in 1 tablespoon

  2. oil 10 to 12 minutes or until lightly brown and crisp-tender.

  3. Remove eggplant from pan; set aside.

  4. In same skillet, over medium-high heat, sauté onions in remaining oil 6 to 8 minutes or until lightly brown and tender.

  5. Stir in garlic, salt, cinnamon and pepper and cook 2 to 3 minutes.

  6. Fold in tomatoes and chick peas; bring to boil. Reduce heat to low, cover and simmer 10 minutes.

  7. Remove cover, add eggplant, and cook 15 minutes or until most of the liquid is absorbed.
