Recipe Ingredients for April's Fritatta

1 cup diced potatoes
1 small onion, minced
4 medium mushrooms
4 eggs
1/4 cup 2% milk
1/4 cup parmesan cheese
1/2 cup ricotta cheese
1 teaspoon vegetable oil

Recipe Directions for April's Fritatta

  1. In oven-proof medium skillet, saute onions in vegetable oil until soft, add potatoes and mushroom and cook until tender and lightly browned

  2. Meanwhile, in a bowl whisk eggs, milk, and cheeses to combine

  3. Pour egg mixture over vegetables in skillet and place in preheated 350 degree oven for 20 minutes or until eggs are set.
