A MUCH healthier, lower in fat and lower in sugar, version of its cousin "Cranberry-White Chocolate-Ginger" But still delicious! the apricots lend it a really subtle sweetness, while the walnuts give it some hearty crunch. The candied ginger at the end is optional.

Recipe Ingredients for Apricot Walnut-Ginger Cookies

1/2 c self-rising flour
1/8 c whole wheat flour
1/2 tbsp ground flaxseed
1/2 tbsp ground almonds
1/8 tsp baking powder
1/8 tsp ground ginger
1/2 large egg
3/4 tsp vanilla
3/4 tsp molasses
1/4 cup unsweetened applesauce
1/4 c oats
1/3 c walnuts, chopped
3 dried apricots
1/4 tsp ginger, chopped
1/4 tsp white sugar

Recipe Directions for Apricot Walnut-Ginger Cookies

  1. Mix flour, flax, almond, baking powder, and ginger in one bowl.

  2. Mix egg, vanilla, molasses, applesauce in second bowl

  3. Add dry to wet.

  4. Mix in oats, walnuts, apricot halves (chopped finely), and candied ginger.

  5. Drop in tbsp-size allotments on cookie sheet. They don't spread much, so it's fine to put them 1 inch away from each other.

  6. Bake at 375F for 8-10 mins
