Lightweight vanilla sponge with apricot jam and buttercream frosting. Makes half a 2-layer sandwich 8" cake.

Recipe Ingredients for Apricot Victoria Sponge

120 g flour
140 g caster sugar
40 g butter
120 ml milk
1 egg
1 tsp vanilla essence
3 tbsp apricot jam
2 oz butter
4 oz icing sugar
1 tsp milk

Recipe Directions for Apricot Victoria Sponge

  1. Flour plus sugar plus 40g butter mixed until sandy consistency

  2. Add 60ml milk

  3. Beat until just incorporated

  4. Whisk egg, 60ml milk and vanilla together and beat into mixture lightly

  5. Fill one 8" sandwich tin

  6. Bake for 20-25 mins at 170 Celsius (fan oven)

  7. When cool, cut in half - make two semicircles

  8. Spread apricot jam on one half

  9. Mix icing sugar, 2oz butter and 1tsp milk together until fluffy.

  10. Spread half the buttercream on the non-jam half of the cake

  11. Sandwich two halves together

  12. Frost the top with the buttercream
