Make this while you are stir frying up some noodles, vegetables, tofu, etc. in oil. Once the stir fry is done, pour this glaze over, toss to coat, then serve.

Recipe Ingredients for Apricot Stir Fry Glaze

1/4 cup shallots, minced
1/4 cup vegetable broth
1/4 cup ginger, minced
1/2 cup red wine vinegar
1/4 cup cooking sherry
2/3 cup low sodium soy sauce
2 T apricot preserves

Recipe Directions for Apricot Stir Fry Glaze

  1. Combine shallots, ginger and broth and boil until shallots are golden - about 5-6 minutes.

  2. Add vinegar and sherry and boil until reduced by half - about 6-8 minutes.

  3. Add soy sauce and simmer an additional 5 minutes.

  4. Add apricot preserves and simmer for 2-3 minutes. Remove from heat and pour over your favorite stir fry noodles and/or vegetables. Toss to coat then serve.
