Apricot souffle, but can easily be varied with any fruit available in an all fruit spread.

Recipe Ingredients for Apricot Souffle

3 eggs, separated
1/2 tsp. lemon zest
1/8 cup apricot all fruit spread

Recipe Directions for Apricot Souffle

  1. Preheat oven to 350 F

  2. Grease four individual souffle cups

  3. Combine egg yolks with lemon zest and apricot jam and mix well

  4. In a separate bowl, beat egg whites until soft peaks form

  5. Fold egg whites into yolk mixture

  6. Pour into prepared cups and bake for 10-15 minutes

  7. Dust with cinnamon and serve
