Recipe Ingredients for Apricot Quinoa Pilaf

1 cup quinoa
2 1/2 cups chicken broth
1/4 cup dried apricots, chopped
1/2 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Recipe Directions for Apricot Quinoa Pilaf

  1. Mix all ingredients in a pot.

  2. Bring to a boil and cover, simmer for 20 minutes, or until Quinoa is done.
